Summertime. It's the season you long for all through the cold winter. Summer means lots of warm sunny days, outside fun and family vacations. And summer means delicious fresh food from local farms. While the variety and amount of fresh veggies and fruits may start off a little slow in the spring, it's a completely different story this time of the year. In July, there's loads of fresh food at the Franklin Farmers Market. It's great to eat, but after awhile you may run out of ideas on what to do once you have all those fresh veggies. They're way too good to let them go to waste in your refrigerator. So for the next few weeks, we're going to give you new ideas of different ways to prepare the absolute best in fresh food.
First up: Squash. When it comes to growing and producing, squash ranks right up there at the top of the list. Squash falls into two groups, summer and winter. Yellow crookneck squash is a southern favorite, but zucchini squash is also. Squash comes in a variety of shapes and colors and because most squash is similar in texture and flavor, they can be interchanged in a lot of recipes. Squash not only tastes good, it's good for you too. High in natural fiber, squash provides a good source of vitamins A and C, plus a variety of nutrients such as niacin and riboflavin.
You'll find plenty of squash from the farmers at the market now. You could buy a lot of it and put it into the freezer to enjoy all year long. Or you can enjoy it now with different yummy recipes. Definition of the Week: Heirloom

Several of the farms at the market raise heirloom vegetables and fruits. Many people believe that heirloom varieties of produce taste better. Heirlooms, which are sometimes called farmer or traditional varieties, have been developed by farmers through years of cultivation and seed saving to pass down so that they will not disappear and will continue to be grown through generations to come.
